The objective of the investigation was the determination of the optimal flow rates of the entrance of the juice of Myrciaria dubia (camu camu) to the spray dryer for its conversion into powder; making conjugations between the operation variables such as: temperature (190 ° C - 200 ° C), gum arabic (4% and 6%) and the rotational speed (RPM) of the sprinkler as an indicator of the speed of feed of the juice to the atomizer. All treatments were analyzed according to the recommendation recommended by the A.O.A.C. (2014) showing that the best treatments were T5 and T6, T5: Temperature 190 ° C, gum arabic 4% of concentration, rotation speed 15000 RPM, vitamin C: 26372.81 mg / 100 g of dry powder, humidity. 5.31%, ash: 3.10%, fat: 0.38, protein: 2.84%, carbohydrates: 88.37, T6: temperature 200 ° C, gum arabic 4% concentration, spin speed 15000 RPM, vitamin C: 25720.38 mg / 100 g of dry powder, humidity: 5.35%, ash: 3.01%, fat: 0.37, protein: 2.85%, carbohydrates: 88.42. The fluid flow rate affects the vitamin C content of the atomized powder of Myrciaria dubia (camu camu), the best results being at 15000 RPM of the sprinkler turning speed, the result being determined by the correct interaction of the factors.
