This present investigation was carried out in the company of Tamales Doña Rosa S.A.C that is dedicated to the production and sale of tamales in the city of Cusco. The company produces batches of 440 tamales, having a supply of 90kg sacks of corn, 10kg sacks of dried pancas, 8kg in sacks of lime and supplies, among which are eggs, onion, minced meat, butter and pisco at each reception. of raw material. The company uses 15kg of corn in each production batch and 440 dry pans together with the inputs. The general objective of the research is to carry out a plant redistribution to increase productivity. The plant redistribution methodology, data collection techniques and instruments were used, the production process, machinery and equipment were described, a time study was developed before the redistribution, a Process Analysis Diagram and a Process Operations Diagram for the preparation of tamales, the floor plan distribution is developed and described before applying the redistribution, a route diagram was made before applying the floor redistribution and finally a diagnosis of the situation was made with these data current, then it was determined that the company has a production area of 128,233 m2, three processes are carried out simultaneously which are: Process 1: Pancas conditioning, with a required production time of 221.37 min and a travel distance of 47.36 meters. Process 2: Corn Flour Preparation, with a required production time of 200.39 minutes and a travel distance of 105.71 meters. Process 3: Preparation of the tamale, with a required production time of 446.32 minutes and a travel distance of 772.01 meters. The longest production time (446.32 minutes) was taken into account as the total required production time, and a total travel distance of 925.08 meters. The need to move machinery and equipment was analyzed and determined, as well as the acquisition of two pieces of equipment called Hose and Canastilla, which will reduce travel distances and times in the production of tamales. With all these results, the productivity of the company was calculated before the plant redistribution. Process 1: Packaging of pancas having a productivity of 2,168 batches / 8h equivalent to 953 pancas / 8h. Process 2: Corn Flour Preparation, having a productivity of 2,395 batches / 8h equivalent to 35,925 kg / 8h. Process 3: Preparation of the tamale, having a productivity of 1,075 batches / 8h equivalent to 473 tamales / 8h. The redistribution was applied in the disinfection and kitchen section, preparation section and the peeling and storage section, the results were calculated and were as follows. Process 1: Pancas conditioning, with a required production time of 219.29 min and a travel distance of 35.47 meters, a decrease of 2.08 min and 11.89 meters was obtained. Process 2: Corn Flour Preparation, with a required production time of 192.08 minutes and a travel distance of 53.94 meters, a decrease was obtained in 8.31 min and 51.77 meters. Process 3: Preparation of the tamale, with a required production time of 430.20 minutes and a travel distance of 498.21 meters, a decrease was obtained in 16.12 min and 273.8 meters. With all these results, the productivity of the company was calculated by applying the plant redistribution. Process 1: Packaging of pancas having a productivity of 2.1188 batches / 8h equivalent to 962 batches / 8h, a variation of 0.020 batches / 8h was obtained, which is equivalent to 9 pancas / 8h, that is, a productivity increase of 0.922%. Process 2: Corn Flour Preparation, having a productivity of 2,499 batches / 8h equivalent to 37,485 kg / 8h, a variation of 0.104 batches / 8h was obtained, which is equivalent to 1.56kg / 8h, that is, an increase in productivity of 4.344%. Process 3: Preparation of the tamale, having a productivity of 1,116 batches / 8g equivalent to 491 tamales / 8h, a variation of 0.041 batches / 8h was obtained, which is equivalent to 18tamales / 8h, that is, an increase in productivity of 3,814%. A total increase in productivity was determined by applying the plant redistribution of 9.08%
