The evaluation of two levels of Salvia hispánica “chía” for the processing of Oncorhynchus mykiss “trout” nuggets was developed in laboratories A-108 SL04LA02 and SL01LA57 of the Departments of Fisheries, Microbiology, and Parasitology at the National University of Trujillo. The analysis was conducted using two treatments with 50% and 75% chía, evaluated through sensory and microbiological tests of the final product under the quality standards of NTP-CODEX STAN 166-1989, DS Nº 007-98- SA, and NTS N°071-MINSA/DIGESA-V.01. Additionally, the nugget tasting surveys were conducted through qualitative and quantitative analysis of attributes such as color, smell, taste, and texture, using structured category scales of fair, good, very good, and excellent according to acceptability attributes from 55 untrained participants. Statistical analysis showed that the treatment with 75% S. hispánica received the highest acceptance rating with a quality score of 12, designated as “excellent,” while the 50% treatment received a score of 11, designated as “good.” However, there were no significant differences between the two treatments, achieving an optimal quality product for direct human consumption. Microbiological analyses were performed according to FDA methodology using differential media, reporting absence and below the maximum permissible limits of microbial agents such as Escherichia coli, Staphylococcus aureus, mesophilic aerobes, Salmonella sp., and V. parahaemolyticus sp., respectively. Sensory, microbiological, and chemical data were processed using statistical tests such as ANOVA, chi-square, and Tukey.
