ABSTRACT In this study, 72 samples of beverages collected in a soup kitchen in the district of La Esperanza - Trujillo were analyzed to determine their total sugar content. The beverages analyzed were: oat, chufla, soybean and quinoa. The refractometric method was used to determine the concentration of total sugars. The averages obtained were: 7.06 g/100 mL for the oat beverages, 6.915 g/100 mL for the chufla beverages, 6.95 g/100 mL for the quinoa beverages and 7.00 g/100 mL for the soy beverages. These results indicate that the beverages have relatively similar total sugar contents, within a narrow range. Additionally, the total sugar content that a person would consume in a 250 mL cup of each of the beverages analyzed was calculated. The averages obtained were 17.65 g/250 mL for the oat drink, 17.29 g/250 mL for the chufla drink, 17.37 g/250 mL for the quinoa drink, and 17.5 g/250 mL for the soy drink. These results exceed the limit of 6 g/100mL and 15 g/250 mL of total sugars for beverages, considered high according to Peruvian regulations. Considering that these foods are aimed at a vulnerable population, it is suggested to consider measures to reduce or eliminate the use of sugar in the preparation of these breakfast beverages.
