ABSTRACT The aim of this study was to evaluate the effect of the concentration of gibberellic acid (GA3) and storage time of the fruit of Aguaymanto (Physalis peruviana L.) in their physicochemical and physiological characteristics at room temperature (25 ° C). It was used for this Aguaymanto from San Marcos, Cajamarca. the classification of the fruit that offseason was considered in the green state and pintón was held that after removing the cover were subjected to evaluation by space of 0 , 15, 30 and 45 days previously immersed in solutions of gibberellic acid ( GA3) at concentrations of 20 and 40 ppm respectively. For each storage, time physicochemical characteristics were determined; Titratable acidity, pH, Brix, and respiration rate of CO2 production and O2 consumption and physiological characteristics of the fruits of Aguaymanto. It was found that the concentration of gibberellic acid and the storage time had a significant effect on pH and respiration rate both CO2 production and O2 consumption ; while acidity was only significant effect of storage time , as for the Brix showed no significant effect .
