ABSTRACT The present investigation was developed with the purpose of evaluating the effect of temperature and α-amylase on the monolayer value of lima bean flour (Phaseolus lunatus L.) determined by the GAB isotherm. For which, two types of lima bean flour were obtained. The first (whole flour) was obtained from the soaked and shelled lima bean grain, the second (hydrolyzed flour) from the first by taking it to a hydrolysis process with alpha amylase (Polizyme AA 100, pH 5.5, 5 h, 51 °C, ratio = 1 g enzyme/kg flour). Both flours were subjected to water activities between 0.1 and 0.9 with temperatures of 20 and 40 °C. The proximal analysis of the flours showed a humidity of 9.5 and 11.16 % for both flours respectively. It was evident that the increase in temperature significantly affects (p < 0.05) the monolayer value, going from 0.0804 to 0.0765 g H2O/g d.b. in whole flour and between 0.0885 – 0.0844 g H2O/g d.b. in the hydrolyzed flour. The maximum equilibrium moisture occurred in the hydrolyzed flour with 0.3971 and 0.3714 g H2O/g d.b. at temperatures of 20 and 40 °C respectively. Finally, the isotherms presented type II sigmoidal configuration according to Brunauer's classification.
