The effect of replacing skimmed milk powder with quinoa flours from Rosada de Huancayo (RH) and Pasankalla (PK) varieties in three concentrations (25, 50 and 100 percent) on the viability of encapsulated Lactobacillus casei, overrun, viscosity, melting speed, hardness and sensory acceptability of a vanilla flavored ice cream. Treatments T1, T2 and T3 corresponded to RH, while T4, T5 and T6 to PK, in substitutions of 25, 50 and 100 percent, respectively. Control (C) did not have any substitution. All analyzes were done in triplicate and ANOVA was applied for statistical analysis. Regarding overrun, the control presented values around 22 percent during storage, while treatments T1 and T4 presented the highest values (23.04 and 33.68 percent, on day 0, respectively). In the apparent viscosity, C presented one of the lowest values (546.67 cp, on day 14), while, with 100 percent substitution, the highest values were presented (RH: 6931.33 cp, on day 14 and PK: 5162.33 cp, on the 28th). Regarding hardness, all treatments and the control reached values around 156906 N throughout storage (p > 0.05). In the fusion rate, C presented one of the highest values (15.29 ml/min), being surpassed only by treatment T4 (16.81 ml/min). Treatments T3 and T6 obtained melting rate values of 0 ml/min throughout storage. The highest counts of the probiotic microorganism were 2 x 1010 CFU/ml and 2.5 x 109 CFU/ml (T3 and T6, respectively, on day 21). Treatment T4 achieved the highest score (6.8 ± 1.52) in general acceptability.
