During the storage time of the salty squid coat (Dosidicus gigas), it tends to change color from milky white to yellow-orange, of a chemical nature called browning, causing its initial product characteristics to be altered. In this sense, the objectives of this study were to identify the concentration of sodium citrate and evaluate the type of vacuum or non-vacuum packaging to delay the appearance of browning and estimate the useful life of the final product. The first stage was carried out in order to stop the appearance of browning using sodium citrate at concentrations of 0.3 mM; 1.7 mM and 3.4 mM and a control; This evaluation was carried out for 21 days, stored at 35°C and it was determined that the concentration of 1.7 mM had the best results in delaying color changes compared to the other treatments, in which the color parameters L* were evaluated, a * and b* in the colorimetric spectrum, the degree of absorbance, likewise, a sensory test was carried out. The second stage aimed to evaluate the type of packaging, with vacuum and without vacuum, where it was determined that the salted squid, packed without vacuum, slowed down the color change compared to the samples packed under vacuum, after evaluating the degree of absorbance. the values of the color spectrum L*, a* and b*; and performing a triangle test for 42 days every 14 days. Finally, the useful life of the salt squid mantle, treated at 1.7 mM sodium citrate and packaged without vacuum, was determined using the Arrhenius equation, having a useful life of 3 months stored at 20°C.
