The research carried out aims to propose a basic management model based on Lean Service to improve productivity in a MSME of the service sector of the restaurant category. The development of this model has three stages. The first stage is diagnostic, which consists of using the technique of observation and in-depth interview to know the problems that affect the productivity of the restaurant under study. The problems identified are evaluated by a prioritization matrix to define the problems with the greatest impact on the restaurant. An analysis of root causes is carried out and a solution proposal is designed to eliminate them. Continuing, the second stage of the model is the design, which consists of building and graphing a process that allows the elimination of the identified problems. The design is carried out under two Lean Service principles: the first principle is the optimization of the flow, whose objective is to streamline the sequence of activities of the process, and the second principle is the Pull system that consists of adjusting the process to the real demand of the product offered by the restaurant. It should be noted that the main tool for process design is standardization. Finally, the third stage of the model is the pilot test that is carried out to evaluate the designed process. The expected results with the proposed model are the reduction of process variability, the elimination of problems and the improvement of the productivity of the restaurant under study.
