The intestinal microbiota has undergone changes over time due to variations in the human diet. Fermented foods can help to recover intestinal microbial homeostasis. Chicha de Jora is an ancient fermented Peruvian beverage that has beneficial effects on health. In the present study, we typified the microbiological profile of the raw material used in the preparation of Chicha de Jora and the changes in bacterial composition during eight days of fermentation. Samples were analyzed using next generation sequencing (NGS) and bioinformatics analysis tools. It was found that the phylum Firmicutes predominated in the Jora maize and Proteobacteria in the Chancaca, and at the end of fermentation Firmicutes predominated. The genus profile changed from the beginning of fermentation to the end of fermentation in all the samples, although in all cases they were described to have beneficial properties for gastrointestinal health and for the quality of the product, demonstrating the beneficial properties of the combination of unfermented Jora corn and Chancaca and after the fermentation process. Finally, it should be noted that the NGS technology unveiled a high percentage of unclassified bacterial species, providing unvaluable information for further studies. This study can serve as a guide for future investigations to analyze the efficacy of the probiotic, prebiotic and antibiotic properties of the bacteria detected in Chicha de Jora.
