Currently, a number of factors are rapidly redefining the food industry, which harms companies with traditional management and production models worldwide. On the one hand, population growth and environmental problems make food shortages a present factor that companies must know how to cope with within their plans. The extinction and shortage of food resources is a latent problem that is not regulated in several countries. Therefore, this disadvantage implies the increase in costs of raw materials and inputs and the profit margins decrease. On the other hand, political food laws, which govern within countries, evolve over time in health and safety. They force to adapt to norms implanted according to, category, product, origin and procedure of each food. However, each country has a different status level, which each food company should have priority. However, the food industry must have great capacity for rapid change in its procedures, with the determination of the procedures to the new political market demands. The Lean Manufacturing methodology is a strategic innovation strategy. Despite being able to affect any field, it focuses on a work philosophy. Identify internal failures autonomously, to obtain greater resources advantages. Mainly, in the food industry it focuses on the elimination of large levels of waste, increase in system performance and flexible production configuration with the determination to meet and manage demand.
