In this investigation whose objective is to make a study of methods and times to increase the productivity of the productive process of passion fruit nectar in the PILOT PLANT OF FOOD INDUSTRIES – UPAO, this research is of type applied, with a population sample because it was considered a month of production before and after of applied the study of methods and times. To achieve the objective, the productive process of the packed passion fruit nectar was evaluated, it was selected, delimited, analyzed the working method of the critical processes, which are the Washing because it present a badly remove stem and the Packing by the method of improvised work, the standard time of Washing and Packing is calculated, which were 28,39 minutes and 31,70 minutes respectively; was proposed a new method of working and using tools in the processes; workforce productivity was calculated through a simulation in the ARENA software to confirm the data obtained in a longer time interval, of the simulation results were obtained similar to those obtained operationally, which confirms that the proposed method is correctly standardized, finally the productivities were compared before and after the application of methods and times study, which resulted that the productivity of the Washing and Packing processes increased by 80.43% and 168.93% respectively; it was demonstrated that the study of methods and times significantly increased the productivity of the workforce of the critical processes.
