The effect of two substitutions of wheat flour (Triticum aestivum) quinoa flour (Chenopodium quinoa) (30 and 40%) and two drying temperatures (50 and 60 °C) on water absorption, loss of solids, firmness, and general acceptability in noodles type fettuccine was determinated. We worked with durum wheat flour and white quinoa flour for making fettuccine noodles. The following statistical tests were used: Levene, ANOVA and Duncan for water absorption, loss of solids and firmness; and tests Friedman and Wilcoxon statistics were used for general acceptability. Significant effect on water absorption values between 179.9 and 204.2% was presented, however, do not showed significant effect on the values of solids loss ranging between 1.2 and 2.5% and for firmness values ranging between 309.3 and 557.2 N. Overall acceptability in fettuccine type noodles for both significantly different drying temperatures, but were similar for the two substitutions at the drying temperature of 60 ° C. It considered the best treatment to the replacement of 30% and a drying temperature of 60 ° C as it produced high water absorption value, loss value low solids, high average firmness and general acceptability in fettuccine noodles.
