The effect of the substitution of wheat flour for cacao husk in powder (0, 5, 10 and 15%) was evaluated in terms of firmness, raw fiber, phenolic compounds and a general acceptability in muffins. The variance analysis determined a significant effect (p<0.05) of firmness, raw fiber and phenolic compounds. The Duncan test stated that the partial substitution of 15% showed a better firmness (2.86 N), a higher amount of raw fiber (8.61%) and phenolic compounds (65.18 mg AG/100 g). Through the test of Friedman, we showed that there did not exist a significant difference (p<0.05) among the treatments of general acceptability. The substitution cocoa husk at 15% had more acceptability with average range of 2.48 respectively with a mode of eight points corresponding to a perception of I like it very much. The substitution of 15% was considered as the best treatment at showed the best results in firmness, raw fiber, phenolic compounds and general acceptability
