The purpose of the research was to replace wheat flour with moringa seed cake flour extracted by press and to expel in the preparation of sweet cookies using the method of Mix Design based on three factors: percentage of wheat flour, percentage of moringa seed cake flour and fat percentage. Experimental formulations (10 with each moringa flour) were evaluated for hardness, expansion factor and protein content (response variables in cookies). From the analysis of mathematical functions to relate the response variables and the factors; polynomials of degree two were obtained for hardness and protein content, and of grade three for the expansion factor. The Global Desirability methodology, determined the best formulation with each moringa flour that allowed to optimize both hardness (1000-3000gf), expansion factor (81-100 percent) and maximization of protein content. The first best formulation was composed of 40.0; 12.1 and 10.9 percent wheat flour; moringa flour obtained by press and fat, respectively; cookie that reported a hardness of 2668.31 gf, expansion factor of 86.79 percent and 17.0 percent protein. And the second best formulation was composed of 40.0; 11.4 and 11.6 percent wheat flour; moringa flour obtained by expeller and fat, respectively; cookie that reported a hardness of 2807.75 gf, expansion factor of 84.81 percent and 14.20 percent protein. The Satisfaction Degree Test (General Acceptability) found a significant difference at 5 percent between both formulations, being chosen the biscuit prepared with moringa flour obtained by the press, which reported a true biological value of 65.5 percent.
