The main objective of this was evaluate the physical, chemical characteristics and sensory attributes of cocoa paste from promising ecotypes of fine aroma cocoa from the northeastern zone of Peru (Amazonas, Cajamarca and San Martin), for this research, ecotypes of fine aroma cocoa were selected and characterized, and the physical characteristics were evaluated through standardized descriptors of the fruit, seed, organoleptic and productivity characteristics. The chemical characteristics of the paste were obtained using AOAC methodologies; and the sensory attributes of the paste were evaluated by expert judges. Twenty ecotypes were selected and characterized from the INDES collection and 10 from the Cacaos with Denomination origin from Amazonas Peru collection; of these, 80 percent and 77 percent of the ecotypes had immature green fruit color and elliptical fruit shape respectively. 90 percent had equidistant spines, 50 percent had intermediate depth of primary grooves and 77 percent had large fruit. For the sensory profile, INDES 53 (5.64 ±0.48) and CAP-92 (6.79 ±0.39) ecotypes stood out; for the total score, CAP-40 and CAP-50 ecotypes reported the highest scores with 72.64±2.75 and 71.79±3.00, respectively. The variability of the ecotypes depended on the categorical variables: apex shape, spine pair arrangement, longitudinal section shape, cotyledon color, seed size, sweetness, bitterness, astringency, floral and fruity notes; and on the numerical variables seed dry weight, cob index, antioxidant activity, aroma, acidity, astringency, bitterness, bitterness, aftertaste, taster score and total score; these variables allowed finding 4 well-defined groups, where group 4 stands out for presenting low bitterness and astringency, high levels of fruity and floral notes in the pulp, with large seed size, very low seed weight (1.66) and a cob index of 12.64.
