The objective of this research was to replace wheat flour with cassava and quinoa flour in the production of a sweet biscuit with acceptable sensorial attributes, applying the simplexLáticce cubic model mix design. First, the percentage of the participation of the components in the mixture was determined by preliminary tests, then the mixture design was applied for three components: Wheat flour, cassava flour and quinoa flour, obtaining ten formulations. For each formulation, four responses were evaluated (general acceptability, protein percentage, fat percentage and shear force) determining the mathematical model that best fit to each one of the variables, as well as the influence of the components of the mixture on the response variable. It was observed that, for the case of acceptability, the wheat and cassava flour contribute in the increase of this, for the protein percentage the wheat and quinoa flours contribute positively, whereas the cassava and quinoa flour contribute to increase the shear force of the cookies. Next, the multiple optimizations of the variables was performed, maximizing the acceptability and the protein percentage, minimizing for the case of the fat and in the case of the shear force maintaining a target value. Then, three optimized formulations were obtained and the highest desirability was selected, which comprised 22.90 percent of wheat flour, 15 percent of cassava flour and 12.10 percent of quinoa flour. Finally, a physicochemical characterization of the optimized cookie was performed, obtaining percentages of ash (1.72), fat (16.39), protein (6.71), fiber (0.71) and carbohydrates (74.47); Likewise, the calculation of the theoretical protein digestibility, PDCAAS and amino acid count was 83.67, 100.4 and 84 percent respectively. The sensory evaluation performed, as an average value of 7.05 in the linear hedonic scale of 9 points, this result corresponds to an acceptable product
