In the present research work, a study will be carried out about the customer service process in a restaurant with high demand, with the aim of increasing the level of satisfaction by applying an improvement that reduces waiting times. To do this, we will focus on the times that directly influence the level of service, using the average time of a waiting customer as an indicator. Time measurement will be applied among the main processes in which the client must wait to be attended, for example, the assignment of a table, the taking of the order, the delivery of it and the payment of the service. The improvement in the process is the reduction of the mentioned times through the implementation of a self-service system that allows the restaurant to increase the level of satisfaction and the turnover of customers in a determined period. In addition, this model would allow information to be stored, generating historical data on consumption and customers, which is economically and commercially beneficial for the restaurant itself. The most important tool used in this research work was a process simulator, based on a sample of 330 tables. Likewise, surveys focused on the consumer profile of Aula 101 were prepared in order to understand their needs.
