Abstract: El presente trabajo de investigación busca demostrar la viabilidad comercial,
técnica, financiera y social de la instalación de un servicio de venta de pizzas
personalizables en la ciudad de Lima Metropolitana. La empresa tendrá como principal
propuesta de valor el servicio Build your own pizza, que le brinda al cliente la posibilidad
de crear desde cero su pizza, combinando los ingredientes de su preferencia. Buscará
posicionarse como una alternativa diferente de los actuales participantes del sector en el
mercado peruano, enfatizando en la importancia de brindar una experiencia de calidad al
cliente mediante plataformas digitales como medios de contacto con el cliente.
En el primer capítulo se elabora el plan de investigación. En el segundo se
muestran los resultados del estudio de mercado. Haciendo uso de entrevistas, encuestas,
Focus Group y revisión documentaria se realizó la definición comercial del servicio y su
estrategia de comercialización. Se obtuvo un 92,7% de intención de compra y un 85,35%
de intensidad, lo que demuestra que existe un segmento del mercado muy interesado en
la propuesta. Se calculó una demanda del proyecto de 76 542 pizzas al quinto año de
estudio, lo que hace al servicio viable comercialmente. El tercer capítulo aborda la
localización del servicio, determinándose que el local de servucción estará ubicado en el
distrito de San Borja. El cuarto capítulo abarca el dimensionamiento del servicio, que
quedó delimitado por el tamaño del mercado. El quinto capítulo contempla el estudio de
ingeniería. Se diseñó un proceso de 7 actividades para la preparación de las pizzas, con
un tiempo estándar de 7,20 min/pizza. Se determinó la necesidad de 8 máquinas y 7
colaboradores para las operaciones, y que el local de servucción ocupe un área de 150
m2
. De esta manera, se demostró que el proyecto es técnicamente viable. En la sexta
sección se determinó que la empresa tendrá una organización funcional y cuáles son los
principales puestos de trabajo requeridos. Finalmente, los capítulos 7 y 8 concluyen que
a un COK de 10,38% se obtiene un VAN de S/526 244,17 y una TIR de 48%, así como
un valor agregado acumulado de S/6 607 618,96; lo que demuestra la viabilidad
económica- financiera y social del proyecto.
This research work seeks to demonstrate the commercial, technical, financial and social viability of the installation of a customizable pizza sales service in the city of Lima Metropolitana.
