The present study is aimed to establish the contribution of potato to the provisional tolerable monthly intake of cadmium in the population of central Lima. The research was of a descriptive comparative level, quantitative approach, basic type and a non-experimental cross-sectional design. A sample of 392 people was taken, selected with the probabilistic sampling method, to whom a Food Frequency Questionnaire was applied. Samples of Yungay, Canchán, Huayro, Amarilla and Amarilla Peruanita varieties of potatoes were acquired in the Wholesale Market of Lima. It was determined that the monthly consumption of potatoes is 5.44 kg and the concentration of 3.9 ± 0.8 μg/kg of cadmium in potato. None of the samples was found outside the limits according to the Codex Alimentarius. To determine cadmium, the Atomic Absorption Spectrophotometry in a graphite furnace method was used. The monthly dietary exposure to cadmium through potato consumption was determined to be 0.33 μg/kg-b.w., corresponding to a contribution of 1.33% to the provisional tolerable monthly intake of 25 μg/kg-b.w., being less than 10%, concluding that the potato does not contribute significantly to the total exposure to cadmium. The monthly dietary exposure to cadmium through potato consumption was less than the provisional tolerable monthly intake. Finally, it was determined that there are no significant differences in potato consumption in the population of central Lima according to region of birth and age, but there are differences according to gender.
