Abstract: El objetivo del presente estudio fue determinar la contribución del consumo de papa a la ingesta mensual tolerable provisional de cadmio en los habitantes de Lima Centro. La investigación fue de nivel descriptivo comparativo, de enfoque cuantitativo, tipo básico y diseño no experimental transversal. Se tomó una muestra de 392 personas, elegidas con el método de muestreo probabilístico a quienes se aplicó un Cuestionario de Frecuencia Alimentaria. Se adquirieron, en el Mercado Mayorista de Lima, muestras de papa de variedades Yungay, Canchán, Huayro, Amarilla y Amarilla Peruanita. Se determinó un consumo mensual de papa de 5,44 kg y una concentración de 3,9 ± 0,8 μg/kg de cadmio en papa, por el método de Espectrometría de Absorción Atómica con horno de grafito. Los resultados de cadmio se encontraron dentro de los límites establecidos por el Codex Alimentario. Se determinó que la exposición dietética mensual al cadmio a través del consumo de papa es de 0,33 μg/kg-p.c., representando el 1,33% de la ingesta mensual tolerable provisional de 25 μg/kg-p.c., siendo su aporte menor a 10%, concluyendo que la papa no contribuye en medida significativa a la exposición total al cadmio. La exposición dietética mensual al cadmio a través del consumo de papa resultó inferior a la ingesta mensual tolerable provisional. Finalmente, se determinó que no existen diferencias significativas en el consumo de papa en los habitantes de Lima Centro según región geográfica de nacimiento y edad, pero que sí las hay según género.
The present study is aimed to establish the contribution of potato to the provisional tolerable monthly intake of cadmium in the population of central Lima. The research was of a descriptive comparative level, quantitative approach, basic type and a non-experimental cross-sectional design. A sample of 392 people was taken, selected with the probabilistic sampling method, to whom a Food Frequency Questionnaire was applied. Samples of Yungay, Canchán, Huayro, Amarilla and Amarilla Peruanita varieties of potatoes were acquired in the Wholesale Market of Lima. It was determined that the monthly consumption of potatoes is 5.44 kg and the concentration of 3.9 ± 0.8 μg/kg of cadmium in potato. None of the samples was found outside the limits according to the Codex Alimentarius. To determine cadmium, the Atomic Absorption Spectrophotometry in a graphite furnace method was used. The monthly dietary exposure to cadmium through potato consumption was determined to be 0.33 μg/kg-b.w., corresponding to a contribution of 1.33% to the provisional tolerable monthly intake of 25 μg/kg-b.w., being less than 10%, concluding that the potato does not contribute significantly to the total exposure to cadmium. The monthly dietary exposure to cadmium through potato consumption was less than the provisional tolerable monthly intake. Finally, it was determined that there are no significant differences in potato consumption in the population of central Lima according to region of birth and age, but there are differences according to gender.
