The growing interest of consumers and producers for biodegradable containers or packaging to preserve the environment, has promoted the development of biofilms based on biodegradable polymers as an alternative to traditional thermoplastic. The aim of the present study was to obtain a biofilms from sacha inchic protein isolate from the cake resulting from the extraction of extra virgin sacha inchic oil from the Shanantina S.A.C. company, which was obtained by press extraction, the protein content of the Sacha Inchic was 84.773 ± 0.558 respectively, with a fat content of 4.8 ± 0.135. Sacha inchic protein isolate and carboxymethylcellulose were mixed to form biofilms with better physical-mechanical properties; regarding the physical properties of the elaborated films (ΔE*, L*, b*, solubility and water vapor permeability) had significant influence as carboxymethylcellulose increased, properties such as humidity and thickness were not affected by the concentration of carboxymethylcellulose because the same amount of macromolecules was used in the treatments (7%). The solubility in the APSI/CMC biofilms ranged (31.399 ± 3.917% to 55.523 ± 3.968%). The addition of CMC in the biofilms improved the mechanical properties, since the values of elongation, Young's modulus and puncture strength increased as the CMC concentration increased, resulting in films with higher strength.
