Abstract: Se cuantificó magnesio, zinc y hierro en pulpa de café mediante espectrofotometría de absorción atómica. Se trabajaron con muestras de variedades y alturas diferentes, Catimor- Colombia y Villa Sarchi, cultivadas a 1606 y 1420 m.s.n.m. respectivamente. Se obtuvo para la muestra de las variedades Catimor-Colombia 2.71, 10.89 y 217.74 mg/100g de muestra seca de zinc, hierro y magnesio respectivamente; y para la muestra de Villa Sarchi se obtuvo 4.87, 11.55 y 158.45 mg/100g de muestra seca de zinc, hierro y magnesio respectivamente.
La muestra de las variedades Catimor-Colombia presentaron valores superiores de magnesio en comparación a la muestra de la variedad Villa Sarchi, mientras que, en esta última, se encontró mayores valores de zinc. Así mismo, las muestras trabajadas presentaron mayor contenido de magnesio, hierro y zinc en comparación a lo reportado por otros autores.
