ABSTRACT Sensory perception of consumers is influenced by their sensory properties and extrinsic or non-sensory properties. The main objective of this thesis was to study the intrinsic and extrinsic factors in the development of a mazamorra morada from the perception of the consumers. For this purpose, the study was divided into three studies. The first one evaluated the impact of the type and content of starch on the sensory properties, acceptance, pH and °Brix of mazamorra morada, showing that the mazamorra morada made with potato starch was preferred by consumers. The second study determined the hedonic thresholds of the mazamorra morada with reduction of sucrose considering a non-linear behavior, and the results showed that the compromised acceptance threshold and the rejection threshold of the mazamorra morada with sucrose reduction were 18.24 and 14.76% m/m, respectively. Finally, the third study evaluated the impact of extrinsic factors on the acceptance and purchase intent mazamorra morada using conjoint analysis and Napping. This chapter has shown that packaging material and convenience are the main factors for the preference and purchase intent. This thesis is innovative both methodologically and at product level, since no studies on mazamorra morada or on its intrinsic and extrinsic sensory properties have been reported so far. In this sense, this study contributes to an unexplored line of research in the country, the sensometry.
