The aim of this research is to increase the efficiency of the specialty coffee production process in a coffee cooperative located in Andahuaylas, Apurímac, Peru, through the implementation of the 5s, Systematic Layout Planning (SLP), and Kanban methodologies. The investigation identified significant inefficiencies in space organization, process standardization, and time management, which negatively impacted the productivity of the cooperative. The applied methodology included a detailed diagnosis of the current situation and the implementation of improvements aimed at reducing waste and maximizing resource utilization. The application of the 5s methodology led to a 41% reduction in idle time, optimizing the organization of the workspace. SLP was used to redesign the layout of elements within the plant, achieving a 21% improvement in efficiency and reducing the workspace from 1,077 m² to 860 m². The implementation of Kanban focused on improving workflow and visually managing production, helping to prevent bottlenecks and balance task demand with production capacity. The results obtained showed a significant reduction in idle time, an increase in productivity, and an improvement in working conditions for operators, creating a safer and more efficient work environment. These findings highlight the effectiveness of applying continuous improvement methodologies in the coffee sector, thereby enhancing the competitiveness of cooperatives.
