The aim of this study was to determine the antimicrobial and antifungal effect of the extract of Allium sativum against ATCC strains of S. mutans, Capnocytophaga sputigena, Lactobacillus casei and C. albicans at various concentrations. The extract was obtained by the maceration process, using ciprofloxacin and fluconazole as a positive control bacterial and fungus, respectively, and 70º alcohol as a negative control. When performing susceptibility testing with the extract at concentrations of 12 mg / ml, 18mg/mL 30mg/mL, 60mg/mL, 90mg/mL, 120mg/mL, we obtained the following results: The concentration antimicrobial against Capnocytophaga sputigena, Streptococcus mutans and Candida albicans, was 120mg/mL, referencing to the standard at a concentration of ciprofloxacin and fluconazole 4mg/ml at a concentration of 2mg/ml. The results are normally distributed at 95% confidence level. With proof of Bartletts, the variance at different concentrations is equal with 95% confidence level. 120mg/mL concentration, as assessed by the Anova is the point of intersection for what was used a Re-tets. According to this test, the concentration of 120mg/mL compared with the standard showed that the results are statistically equal. It is concluded that the hydroalcoholic extract of Allium sativum showed antimicrobial effect against ATCC strain of S. mutans, Capnocytophaga sputigena, and C. albicans with the exception of Lactobacillus casei was resistant.
