This research entitled as: "Evaluation of basic parameters (moisture, ash and volume) from organic remains of Rioja central market", collects information through the observation and quantification of responses by the application of surveys, with the general objective of evaluating the basic parameters (moisture, ash and volume) from organic remains from Rioja central market, as an alternative fertilizer to improve; and the specific objectives related to the application of surveys addressed to the salespeople of each sales point and the users of the supply center to know the level of knowledge about the treatment of organic waste in Rioja central market, the quality of the soils. Perform the characterization of the moisture of the solid waste collected in Rioja central market and characterize the critical points of greater accumulation of waste. Concluding that the conditions of work in infrastructure, cleaning and odor control is acceptable and it was determined that in 2018 there was a per capita production of 1579.45 kg / post / year and it is estimated that by the year 2025 there will be 1692.78 kg / position / year; the average moisture content in organic waste in a central market place in Rioja is 6.33% and the water consumption generated by each position is approximately 20 m3 per day.
