In Lima, Peru there is an area with many startups and new companies that open every day, the restaurant sector. Most restaurants do not have a cost structure, they cannot measure or control their profitability so as companies they are destined to fail over time. In addition, the raw material of this type of business has very variable prices due to different external factors that are difficult to control. Taking this into account, this thesis seeks to show if production costs are applied within four- and five-fork restaurants in the Miraflores district in 2024, so the objectives are based on knowing if the company applies the measurement or control of production costs. The scope applied has been descriptive, with a non-experimental design, quantitative and basic approach. To obtain the information, the questionnaire was used as an instrument. The results obtained, based on the perception of the employees of different companies belonging to the sector, have shown that the four- and five-fork restaurants located in the Miraflores district in 2024 do apply production costs, which serves as information for this type of companies in the food and beverage sector that normally do not have an adequate measurement structure.
