The conservation of fruits and vegetables are being developed with traditional technologies and with emerging technologies. The Ananas comosus (pineapple) is a tropical fruit that is grown in different parts of the world, and in Loreto it has its production boom along the Amazon River. It is a fruit that is industrialized in different products, from slices as food of the fourth range, compotes, jams, nectars, juices, porridges, etc. Its objective is to obtain dehydrated slices by osmotic dehydration using the combined methods of Ananas comosus (Piña), Guayaquil Variety and Cayenne Variety, for the preparation of the jam. For this, a completely random factorial design was applied, with three study factors, impregnation time (F1 = 4 and 5 hours), Pineapple osmotic dehydration temperature (F2 = 30 - 40 and 50 ° C), Variety (F3) = Guayaquil, Cayenne). For the marmalade, pectin was used (F1 = 0.8%, 1.0% and 1.2%), sugar concentration (F2 = 40 and 50% of the weight of the dehydrated pineapple). Taking into account the final flow diagram that is: raw material, selection of raw material. Washing disinfection and rinsing, peeling and cutting, immersion in an antioxidant solution, impregnation of the osmotic solution, drying and drying, homogenization of the slices, cooking, baking, packaging and chilling, labeling and storage. As a final result, the T3 and T4 treatments that represent the Guayaquil variety are the best quality marmalades obtained for this case. The process design is as follows: Guayaquil variety worked with an osmotic dehydration of 5 hours where we use 40% sugar for the 1.0% pectin jam, 0.1% potassium sorbate, the sensory analysis shows that the T3 and T4 treatments are the best evaluated.
