For the present study, two macambo morphotypes "Theobroma bicolor (Humb. & Bompl.)" Were selected, one of which has as a morphological feature a rough and hard shell, which was called Morphotype 1; While the second type, called Morphotype 2, has a rough and soft shell. The pulp and seed of both fruits were subjected to chemical physical tests in order to determine their composition. In the proximal analysis of the pulp it was found that morphotype 1 contains higher moisture content (84.87%) and crude fiber (1.44%), while morphotype 2 showed better contents of ash (2.13%), fat (0.35 %) And crude protein (7.74%). The analysis of the seeds showed well differentiated results, where the moisture content decreased to 41.33% for the morphotype and 42.65% for morphotype 2. Likewise, morphotype 2 exhibited the highest amounts of ash (1.96%), Of fat (25.71%) and of crude fiber (3.31%) The antioxidant activity was analyzed using the method: DPPH free radical capture; Presenting the highest antioxidant activity in the seed of both morphotypes. In the determination of total phenols, the morphotype 1 (3.45 mg gallic acid / g MF) was the most active pulp and the morphotype 2 (6.44 mg gallic acid / g MF) was the most active seed. The determination of minerals was done by the method of atomic absorption spectrometry, obtaining a high potassium concentration in the pulp of morphotype 2 (219.75 mg / 100gMF). In the seeds were potassium and magnesium minerals present in the highest concentration in both morphotype 1 (4028.25 mg / 100gMF and 13.50 mg / 100gMF) and morphotype 2 (3279.75mg / 100gMF and 157.19 mg / 100gMF).
