The Peruvian Amazon faces a high percentage of child malnutrition that urgently requires the development, planning and access of foods with high nutritional value that provide complementary nutrients to breastfeeding. Therefore, the present research work has the objective of developing a compote based on Annona muricata (soursop), Mauritia flexuosa (aguaje), Solanum sessiliflorum (cocona) and its antioxidant capacity and its acceptability as a complementary food; For this, a completely randomized experimental design was carried out with three formulations and three heat treatments applying a flow chart. The results showed that the formulation with soursop 70%, cocona 15% and aguaje 15%; It was the one that showed the best values in the physicochemical, microbiological and sensory tests; with moisture values 84.62 g, total fat 1.72 g, total proteins 1.03 g, total carbohydrates 12.14 g, total energy 68.16 Kcal, soluble solids 13.50 g, pH (3.90), vitamin C 16.66 mg, provitamin A 0.576 mg, vitamin A 2.38 mg, potassium 10.05mg / 100g, magnesium 21.25mg / 100g. The developed product showed high functional properties, being that the antioxidant capacity shown for the DPPH radical was 27% inhibition and for the ABTS + radical it is 20% inhibition and presented total phenols in 0.566 ± 0.015 mg GAE; It is suitable for human consumption, in addition, it can be an industrial alternative for the conservation of Amazonian raw materials.
