This research was carried out in order to determine the antioxidant activity of the species Lippia dulcis Trev. (Fresh Mint) in extracts of leaves, flowers and stems. The determination of antioxidant activity was performed by the DPPH method for the determination of total phenols was carried out following the methodology of Singleton and Rosii (1965), for the determination of tannins methodology Valls (2000) was used for anthocyanins was determined by the method of differential pH, with the methodology Sotero and Garcia (2009), for determining flavonoids methodology Gutierrez (2000) was used, obtaining, for leaf extract / flowers Lippia dulcis (mint sweet), antioxidant activity of 25%, from a minimum concentration of 1.3 mg / ml in turn, flavonoids (quercetin 45.68 ± 0.04 g / 100 g original sample), total phenolic (112 22 ± 0.0 mgGAE / 100 g original sample), tannins (14.21 ± 0.10 mg (+) - catechin / 100 g original sample) and extract stem of Lippia dulcis (sweet Mint) an antioxidant activity of 25%, from a minimum concentration of 0.09 mg / ml, total phenols (96.10 ± 0.0 mgGAE / 100 g original sample), tannins (6.33 ± 0.09 mg (+) - catechin / 100 g original sample), flavonoids (quercetin 0.20 ± 0.0 g / 100 g original sample) and anthocyanins (0.56 ± 0.50 mg cyanidin-3-glucoside / 100 g original sample.
