Its general objective is to determine the microbiological quality of soft drinks sold in the main markets of the district of Ventanilla. A sample of 45 passion fruit soft drinks and 45 soda pops were sampled; Of 05 sales positions per market in the "MILAGRO", "JUAN PABLO II" and "PACHACUTEC" markets. The evaluation was carried out using the methods validated by the Official Association of Analytical Chemists (AOAC) for Petrifilm plates to quantify the presence of total coliforms, Escherichia coli, mesophilic aerobes and Staphylococcus aureus, and then compared the results with the maximum permitted limits of the NTS 071 591 2008 MINSA. The results of the evaluation indicate that 93.3% and 86.6% of sales positions analyzed for passionfruit soda and purple corn soft drinks, respectively, presented microbial growth of Total Coliformes exceeding the limits of the standard. 6.6% of maracuyá soft drink stalls obtained an unacceptable growth of Escherichia coli, according to current regulations. 20% of the total number of stalls analyzed in relation to passion fruit soda evidenced the Staphylococcus aureus count above the values of the sanitary standard. It is concluded that artisanal soft drinks (maracuyá and purple corn) marketed in the evaluated markets do not comply with the Technical Specifications of the standard, thus demonstrating the poor quality and low safety of these products.
