This research established the relationship between the hygienic sanitary condition with the microbiological and sensory quality of the slaughtered chicken meat. The research is framed within the non-experimental method and correlational design. The study sample consisted of 50 stalls selling chicken meat. For the evaluation of the sanitary and sensorial hygienic condition, the sanitary surveillance sheet and sensory characteristics regulated in the sanitary regulation of the market operation of supply according to ministerial resolution No. 282-2003-SA / DM were used, and for the microbiological quality was used the microbiological criteria established in NTS N ° 071-MINSA / DIGESA-V.01. We proceeded to perform a descriptive analysis to elaborate the graphs and inferential analysis to perform the analysis of variance, as well as the chi square independence tests. It was found that 86% of the sanitary conditions of the outlets were qualified as not acceptable, as well as 98% of the analyzed samples exceeding the acceptable limit (cfu> to 105 or log10 cfu / ml> 5) of count of Mesophilic Aerobes, in addition 62% of the samples analyzed showed growth of Salmonella sp bacteria, observing that the microbiological limits are not met; 42% of inspections of slaughtered chicken meat were rated with sensory rejection characteristics. Concluding that there is a significant relationship (p> 0.05) between the sanitary hygienic condition and the microbiological and sensory quality of the slaughtered chicken meat sold in the Belén Market.
