The mixed juice drink is consumed by most people for their natural flavor, since most of the raw material (fruit) has important nutritional properties. It is also a drink inexpensive and accessible to any social group. This type of food because it is not pasteurized is a source of risk to the health of the consumer population, so knowing its quality is important. The aim of the study was to evaluate the relationship between healths and hygienic conditions microbiological quality of mixed juice that is sold in two markets of the city of Iquitos, 2015. In the present study, the research design was a descriptive, cross-sectional association. Taking as shown in the 16 stalls in the Central Market and 23 stalls in the market Bethlehem (lane 9 December) both places assorted fruit juices marketed. Sanitary hygienic conditions of the stalls selling assorted fruit juices was determined by a survey in the form No. 06 (health surveillance provision markets) and icrobiological quality (mesophilic aerobic bacteria, coliforms, E. coli, Staphylococcus aureus and Salmonella sp.) through technical Petrifilm (AOAC Official Method 2011). According to the results from the survey for hygienic sanitary conditions it found that 39 stalls analyzed 28% were rated as acceptable and 72% were rated as fair. For the microbiological quality of juices assorted fruit was found that 100% of the samples analyzed growth of aerobic mesophilic bacteria, 94.9% showed growth of coliforms, 97.4% no growth of Escherichia coli, 97.4% had no growth of Staphylococcus aureus and 100% no growth of Salmonella sp. It was established that there is a difference statistically significant at alpha = 0.05 between health hygienic conditions of the stalls selling assorted fruit juice and the microbiological quality of the same. So it is recommended to local municipalities with a plan of health urveillance and not currently regularly meets adequate review in these establishments, so it is recommended as sanitary surveillance to ensure the quality of products that are sold in a outpatient.
