In order to evaluate the potential of cake and oil of two species of sacha inchi (Plukenetia huayllabambana and Plukenetia carolis-vegae) grown in Peru, particularly the native seed propagated in the Peruvian Amazon, the proximate analysis of the cake was made, and as physicochemical analysis and characterization of the oil. the fat fraction obtained using petroleum benzine was greater for Plukenetia carolis-vegae with 49.28% and 48.82% for P. huayllabambana. Sacha Inchi cake was at its proximal composition containing protein of 8.83% for P. huayllabambana; to P. carolis-vegae a 14.26%. The mineral content by atomic absorption spectrometry was determined to obtain a high concentration of potassium and magnesium for both species. The fatty acid profile was determined by gas chromatography, the results indicate a high percentage of unsaturated fatty acids, consisting mainly of linolenic acid (ω3) whose content is 58.71% for P. huayllabambana and 57.06% for P. carolis-vegae. The antioxidant activity of the oil was determined by two methods: the capture of DPPH radical - with 2,12μmol TE/g for P. huayllabambana and 2,30μmol TE / g for P. carolis-vegae, and capture of ABTS radical - with 2,63μM TE/gMF and 3,38μM TE/gMF for P. huayllabambana and P. carolis respectively. Oils presented density values at 20°C similar to those reported in the Peruvian regulations (NTP), and iodine value (P. huayllabambana presented 196,90g I/100g and P. carolis-vegae 199,07g I/100g), saponification value of 185,09mg KOH/100g for P. huayllabambana and for P. carolis-vegae was obtained a saponification value of 191,13mg KOH/100g. Quality parameters such as free fatty acids, oils classified as high quality. The peroxide values presented in both species below 10meq O2/kg oil values.
