This research used as raw material "Psidium guajava L", guava, justification of this work is the fortification with iron as ferrous sulfate, which gives added value to products made with Amazonian raw materials and himself of characterization of the raw material, giving the following results: humidity 82.70 g, total Fat: 0.11 g, total carbohydrates: 16.16 g, total protein: 0.48 g, total ash: 0.55 g dry matter: 17.30 g, energy: 67.55 kcal, vitamin C: 52.50 mg, or Brix (20 ° C): 9.00 all these analyzes were performed using the methodology of the AOAC, fruit pulp was obtained using a pulpeadora / refiner, with meshes of 5mm and 0.8mm opening, having a yield of 85% as refined pulp, and 15% of waste.Then we test the unit process was conducted, as follows: raw materials, reception / selection, washing, blanching (To: 80 ° C x 1 minute), pulping / refined mesh (5 mm and 0.8 mm in diameter), mixing / cooking / fortification , heat treatment (To 100 ° C x 30 minutes, 0.15% iron sulfate, packaging, chilled, 68oBrix, storage, in this step the Formula No03 (50.00% guava pulp, pectin 0.8%, 0.10% potassium sorbate used , brown sugar 48.95% iron (as ferrous sulphate): 0.15% this formulation was the best feature sensory presented, using 25 untrained panelists, was used hedonic scale of 1 to 5. These characteristics were evaluated color, smell, taste and overall appearance. Moisture: 29.82 g, total ash: 0.30 g, Total Fat: 0.11 g, total proteins: Once obtained the final product (fortified guava jam), chemical physical analysis in 100 grams of edible portion is made 0.10 g, oBrix : 68.00, total energy: 273.39 kcal, dry matter: 7018 g, Vitamin C 35.00 mg, Iron: 6.50 mg, pH (20oC): 3.60. As for the microbiological analysis reported the following results: mold: <10 (CFU / g), yeast: 1.0 x 10 January (CFU / g), which are within the parameters required by MS / DIGESA, regarding organoleptic results, F1: color: 3.20 Odor: 3.10 flavor: 3.05, overall appearance: 3.00, F2: 3.30 Color, Odor: 3.10 flavor: General Appearance and 3.20: 3.10 and F3: Color 4.88, 4.86 odor, flavor 4.90 and overall appearance 4.70, in statistical tests is concluded that there is no significant difference between each formulation (F1, F2 and F3).As for the microbiological analysis report the following results: mold: <10 (CFU / g), yeast: 1.0 x 10 January (CFU / g), which are within the parameters required by M.S/DIGESA.
