The objective of the research was the determination of the drying parameters of the Xanthosoma sagittifolium (huitina potato) of the white variety, using the fluidized bed method for is later use as substitute flour, as a way to give added value to this tuber for the benefit of small producers. For the drying process of Xanthosoma sagittifolium (huitina potato), conjugations were made between the operating variables such as: temperature (50 °C – 70 °C), thickness of the sample (1 mm – 2 mm) and RPM22 y RPM25 (air speed: 5 m / s – 6 m / s), the processing of the experimental data obtained was performed, generating the characteristic curves of drying and the models that describe them. All treatments were analized according to the recommendation of the A.O.A.C (2014) showing that the best treatments were T3: thickness (1mm) Temperature (70 °C), RPM22(5 m / s), humidity: 7.83 ± 0.03 %, ash: 2.70 ± 0.02 %, fat: 0.74 ± 0.04, protein: 7.45 ± 0.06 , carbohydrates: 81.29 ± 0.06 %, calories: 361.58 ± 0.32 Kcal; T5: thickness (1mm) temperature (50 °C), RPM22 (6 m / s), humidity: 8.85 ± 0.03 %, ash: 2.35 ± 0.02 %, fat: 0.86 ± 0.06, protein: 6.37 ± 0.34 , carbohydrates: 81.57 ± 0.29 %, calories: 359.28 ± 0.34 kcal. The statistical analysis with the factorial model 23 highlighted the importance of temperature and air speed during the drying process, but concluded that the moisture content, proteins, carbohydrates and the other physicochemical values found after the drying process depend only on the factors temperature and material thickness. The microbiological analysis of the flour indicates that it is within the permissible limits and is suitable for human consumption according to the standard.
