The (ETA) transmited illness for food in Perú shows 35% of the total transmited illness for food consumption. The principal goal of this research study was to contribute significatively about the microbiological quality of Mauritia flexuosa L.f. (aguaje) a very consumed fruit of our region for town cuoncil and DIGESA. The population simple was taken from 24 urban zones of Punchana district. We have determined mesophile aerobic using the standard recuent method in tray for all environments. Scherichia coli, by number method more probable (NMP), procedure described according food microbiological specification of international commissión and absence or present of Salmonella sp procedure described according Food And Drug Administration FDA – 2007, according the reuslts 24 points of sales in mesophile aerobic, 22 get over the permited limit (104 UFC by gram of sample). In Scherichia coli, the analysis all samples were of minor values that 3 NMP by gram of sample of Mauritia flexuosa except the F group that showed a value of 3.6 NMP by gram. The Salmonella sp analysis showed total absence of this microorganism. We conclude that of the of the 24 points of sell of Punchana district according to the rules 22 showed no fit for human consumption.
