The purpose of this study was to assess the knowledge of hygiene in the handling of the school food purees in the program Qaliwarma (PQW) in rural schools in the province of Maynas in 2013 before and after an educational intervention. The method used was quantitative, with a pre -experimental design analytical prospective. The techniques used were interviews and observation, the instruments used for data collection was the questionnaire (pre-test and post-test) and a hygiene education intervention based in the handling of food. The sample consisted of four Educational Institutions (E.I.) which have different characteristics in terms of linkage to PQW, stability in their participants and their turnover. Two E.I. had closer links with PQW and stability (so called consolidated IE). It was observed in Consolidated E.I. greater pre-intervention knowledge (22.2 - 33.3 % average high knowledge) and a moderate change after the same (62.5 - 66.7 %). By contrast in poorly consolidated E.I.there was a lower level of knowledge prior to the intervention (11.8 - 16.7 %) but there was a significant increase after the intervention (71.4 - 100%).
