The study was carried out in the facilities of the company RICOLAC SAC, to obtain instant flours and in the pilot bakery plant of the FIA-UNAP, Province of Maynas – Loreto, with the objective of replacing instant rice and soybean flour (called extruded base), in a proportion of 95%: 5% (flour:soy), by wheat flour in the preparation of bread in percentages of 5, 7.5 and 10%, having as results of the physical chemical analysis of the ideal formulation according to sensory test that of 5% (F1): humidity: 32.15 g, total ashes: 2.05 g, total fats: 5.05 g, total proteins: 9.30 g, total carbohydrates: 51.45 g, calories: 208 Kcal, dry matter: 67.85 g, titratable acidity (H2SO4): 0.07%, pH (25oC): 6.75, obtaining a bacteria toad suitable for human consumption: Fungi: 1.3x102 CFU/g, Yeast: 2.0x102 CFU/g. and in the three formulation no significant difference was found.
