The search for new sources of dietary fiber suitable for human consumption, the development of new technological parameters for the preparation and preservation of cookies, which contribute to a healthy diet are the antecedents that led us to the development of the following research, the use of the filadermis and fermented pulp of Manihot esculenta (Yucca) in the preparation of fiber-rich cookies. For the fermentation, the best treatment in 5% yeast concentration of water was used, which had 2.5% fiber, good smell and texture (pasty), initial temperature of 31 ° C and end of 28 ° C, pH initial of 5,00 und. and final of 4.5 und; Initial degrees of brix of 18 ° and end of 9 °; obtaining 79.48 g of moisture, 0.71 g of ash, 1.02 g of protein, 0.27 g of fat, 0.74 g of soluble fiber, 1.76 g of insoluble fiber, 16.02 g of carbohydrates and without the presence of acids cyanogens In the elaboration of Cracker Cracker Crema fermented mash "yucca" with a 40% addition was used, whose macronutrient value is 9.53% protein, 5.89% fat, 65.09% carbohydrate, 3, 09% soluble fiber, 8.91% insoluble fiber, and minerals such as calcium 59.22mg, phosphorus 104.87mg, iron 2.19mg, magnesium 42.39mg and potassium 140.67mg. Semi-sweet cookies were made using fermented "cassava lady" with a 40% addition, whose macronutrient value is 6.11% protein, 11.56% fat, 64.34% carbohydrate, 1, 02% soluble fiber, 7.34% insoluble fiber, and minerals such as calcium 33.11mg, phosphorus 88.69mg, iron 0.68mg, magnesium 15.84mg and potassium 140.67mg. The microbiological analysis of the fermented dough and the cookies indicate to be within the permissible limits according to the Sanitary Regulation for the Manufacture, Preparation and Expense of Bakery Products, Biscuits and Pastry.
