The study was carried out with the objective of determining the apparent digestibility coefficient (ADC) of the protein and energy of the chestnut cake, Bertholletia excelsa in juveniles of Piaractus brachypomus paco. The indirect method with chromium oxide marker was used, collecting the feces by the modified Guelph system. The diets consisted of 69.5% reference diet (RD); 0.5% of inert marker and 30% of the evaluated ingredient: raw chestnut cake (TCC) and roasted chestnut cake (TCT). 90 juveniles of P. brachypomus paco with an average weight of 120 g were used. The fish were received in acclimatization tanks to the experimental diets where they remained for seven days; food was supplied three times a day; 9 a.m., 2 p.m. and 8 p.m., seven days a week. Then, on the eighth day, one hour after the last feeding, the fish were transferred to the 200L incubators for the collection of feces; placing 10 fish per incubator. The experimental phase was 60 days, the daily collection of feces was carried out. The feces were frozen at -20 ° C, to be later lyophilized and stored at a temperature of -17 ° C. The results of the CDA of the CBT are for protein 57.9 ± 2.9% and for energy 90.8 ± 1.8%; the ADC of the TCT are for protein 59.8 ± 3.6% and for energy 91.3 ± 1.3%; They were statistically analyzed by ANOVA, showing that there is no significant difference (P> 0.05). In conclusion, the CDA values for protein and energy were similar between the raw chestnut cake and the roasted chestnut cake; both alternatives can be included in the diets.
