This research was carried out in the Conservation Pilot Plant of the National University of the Peruvian Amazon. Using the experimental descriptive method and a design for convenience both for pulp and shell raw material. First the determination of antioxidants was made. Total phenols, anthocyanins, flavonoids and tannins both in the shell and in the pulp of Syzygium malaccense (Pomarrosa) this was done from the drying of the peel, after the pulp of the raw material and preparation of the ethanol extracts, then determined the antioxidant capacity. Where once all these determinations were made, it was found that the skin has more antioxidant compounds than the pulp (phenolic compounds), the pulp reports very low results or in other negative results, followed by chemical physical analysis of the skin and flesh of rose apple, to then carry out the process of production of light jam using formulations, being its process as follows: raw material, heavy I, reception / selection, washing / disinfection, cutting, blanching, weighing II, pulping / refining, conditioning / mixing, heat treatment , heavy III, packaging, cooling, storage / refrigeration and final product. Of the three proposed formulations, it was the F3 formulation, the ideal one, as follows: rose apple pulp. 98. 15%, Stevia: 0.16% (E-960), sucralose: 0.02% (E-955), pectin: 1.05% (E-440), citric acid: 0.50% (E-330) and potassium sorbate: 0.12% (E-202). Chemical physical analysis (I report a soluble solids content: 5 or Brix and a content of 23.39 Kcal), microbiological, sensory and statistical of the final product, which reports that there is no significant difference between each formulation. Finally, the preparation of the laigh jam with the addition of Stevia as a low calorie intake compared to sucrose allows the possibility for the consumption of people with diabetes.
