The research was to determine the effects to optimize the parameters in the fermentation process of sugarcane juice. The transformation of sugar into alcohol, is given by the cell to live and multiply, have to produce energy, and the energy source are sugars (carbohydrates). These also serve as a source of energy; they are also the precursors of amino acids, proteins, polysaccharides and lipids. Temperature parameters, pH, yeast concentration and nutrients were evaluated; for maximum conversion fermentecible sugar ethanol, determining the conditions of optimization parameters being, optimum temperature: 29.0 ° C; pH: 4.78; Concentration optimally yeast: 1.0 g / L; Nutrients (ammonium phosphate: 3.0 ppm Ammonium sulfate: 5.5 ppm Zinc sulfate: 3.0 ppm, manganese sulfate: 1.0 ppm, magnesium sulfate: 1.0 ppm); obtained in M2 sample. The technique used was to prepare three samples. To evaluate the fermentation time cane juice for ethanol, it was determined that the optimal average time in the three samples tested (M1, M2 and M3) was 16 hours, with the M2 sample which has a higher alcohol yield at the end the fermentation process, this due to the addition of nutrients in optimal concentrations, because with the absence of these nutrients in the sugarcane juice, fermentation extends for more than 72 hours, despite not vary the temperature ( 29.0 ° C), in addition to the pH, is in the optimum range is 3.5 to 5.5.
