Objective: Objective: To determine the Glycemic Index and the Glycemic Load of the potato, moraya and chuño in healthy high Andean inhabitants of the city of Cusco. Methods and materials: This is an experimental study, consisting of 30 healthy volunteers who met the inclusion criteria, the foods studied were the father, moraya and chuño. Capillary glucose controls were taken 0, 15, 30, 45, 60, 90 and 120 min. For the determination of the glycemic index (GI) a graph was made with the reference points, finding the area under the curve (ABC) using the trapezoidal method; for the determination of the glycemic load (CG) the GI was used multiplying by the amount of carbohydrates of a habitual portion of the food divided by 100. For the comparison of foods with the ANOVA statistical test. Results: Results: The glycemic index of the potato was 85.3 (high IG), the moraya had a GI of 65.2 (moderate IG) and the chuño with an IG of 36.3 (low IG). Being related to the values of the physical load for the potato and the moraya was 42 and 32 respectively, the chuño compared to the previous 2 years had a CG of 18 (moderate CG). Conclusions: The glycemic index of the chuño is low, being able to replace the potato, it can use the dietetic therapy of the patients with risk of diseases like the metabolic syndrome and the diabetes type 2.
