This report analysed and developed the system of process control and simulation for the area of production of craft beer. The first chapter has been formulated the approach of the problem with the boundaries of research, the objectives of the study and the variables of this. The second chapter presents the theoretical framework used for research work, which the background studies and the scientific bases-teorico are focused on the implementation of automation systems using Siemens PCs7, simulation of production lines and design processes of a craft brewery. The third chapter presents the methodology of research, which is applicable, descriptive and propositive, not experimental, transversal, with approach qualitatively. Used survey and observation techniques are also described. In the fourth chapter raises the research proposal, prior diagnosis of the production of the process engineering and services raises S.A.C. , also the platform for programming and configuration of automation stations, development of the graphical interface of the SCADA system operation, as well as the industrial network configuration will be applied in the Software Simatic PCs7 V8.1. For the development of the area of production used bookstores standardized to craft brewing processes, including instrumentation, equipment, control and processes standardized on similar processes, architecture features predefined applied control equipment typical of a brewering plant. The same way PCs7 facilitates the development of the graphical interface as each team process variables are generated and are automatically linked to their respective addresses on the SCADA system. The fifth chapter shows the result and the comparison of the production of process indicators. The solution developed by the PCs7 system ensures the integration of control systems on various stages of the process under a single platform. It is also as a batch process operation benefited due to much information that has the operator from the station's operation. Also, we will have tools of simulation for induction conditions simulated in the production process, that is generated algorithms pre-defined, that emulate (variations) fluctuations of temperatures, pressures, volumes, and other variables, which will allow us to get efficiency reports and ratios of production with which we can make a comparison with respect to the actual process of the company and the proposal raised.
