Pajuro seed (Erythrina edulis) is an underutilized native legume consumed as a vegetable and could be a potential source of quality nutrients. Within the framework of this research, a physical characterization of raw pajuro seeds was carried out, determining that the seeds analyzed stand out for their large size and weight in comparison to other legumes, had a reniform shape, were dark reddish brown in color and could be classified as fresh seeds due to their humidity. They were then subjected to traditional cooking to evaluate the effect of four cooking times (20, 25, 30 and 35 minutes) on the chemical composition of the raw and cooked seeds. It was determined that at 25 minutes the best results were obtained, at this time the ash content was significantly reduced from 6.23 to 5.77 %, starch content from 40.61 to 31.91 %, the trypsin inhibitor activity from 52.25 to 2.72 mg TI/g, total phenolic compounds from 1.61 to 1. 22 mg AGE/g, antioxidant capacity by DPPH from 37.99 to 32.39 µmol TE/g and by ABTS from 201.09 to 140.42 µmol TE/g, but significantly increased carbohydrate content from 72.20 to 73.04, in vitro protein digestibility from 75.82 to 79.25 % and obtained the lowest predicted glycemic index (88.41). Cooking time had no effect on protein and fat content. The findings of this research will be important to evaluate the effect of cooking time to ensure nutrient conservation, anti-nutrient reduction, modulated digestibility and good antioxidant capacity of pajuro seeds.
