The professional sufficiency work was carried out in a yogurt processing factory, specifically in the Serac 4 (1kg presentation), Serac 2 (1.9kg presentation) and Adipack (90g presentation) lines, in order to , using an understandable and practical methodology of continuous improvement, to be able to determine certain process capacity indexes (Cp and Cpk) that will help, not only the company in question, but can be applied to any other, to observe an overview of the process of packaging in their lines, in order to determine which processes are adequate or not, and from them, propose an improvement proposal, as a team, which leads to savings of non-compliant products, costs, among others. For the development of this work, the Minitab 17 program was used to determine Anderson Darling normality tests (Serac 4 and Adipack did not follow a normal distribution) and process capacity indices (Cpk and Ppk, mainly). The methodology used consisted of 4 basic stages, which goes from the interview with the owners of the process, until reaching the proposal for continuous improvement. Knowing this, it was obtained for the Serac 4 line, Ppk values of 1.3 and 1.34 in July and August respectively, while for the Serac 2 line, values of 1.13 and 1.26 in said months respectively. Finally, and as a means of study, the Adipack line was taken, which obtained 0.1 and 0.2 Ppk in July and August respectively, unanimously, as an inappropriate process. It was recommended, after showing the results obtained through the process capacity indices, to evaluate the implementation of the suggested improvements, through quality costs and to carry out, in future opportunities, awareness talks so that the operating personnel can grasp the importance of the improvements of the process capacity indices in the production process and what it entails to have a process under statistical control.
