The purpose of the study was to design a techno-artisanal eco-friendly plant for the production of pisco in the valley of Caraveli-Arequipa. Based on the diagnosis of the current situation, adjacent environments were proposed to achieve a continuous process using gravity, semi-automatic equipment and accessories. Also, the installation of photovoltaic panels, a biodigester, a biological filter and a composting bin to facilitate access to basic services and to be eco-friendly with the environment as a measure in response to the climate crisis and the efficient use of resources. The potential market for eco-friendly artisanal pisco focused on the city of Metropolitan Lima and Madrid, a market decided with the International Market Selection matrix. The supply projection calculated between 2023-2030, estimated a production equal to 13239.8 L of pisco, while in Spain it will be 384206 L in the last year, both projections with an increasing trend. The price set was S/.89, which is included in the current price range. The installed capacity was related to the number of clay vats, the Moscatel production line would process 7245 bottles of pure Moscatel pisco/year per season and the Negra Criolla line 7392 bottles of pure pisco Negra Criolla/year. This required 14 operators working 8 h/day during four months (March - June). In terms of micro location, the Ananta estate was the most popular. The investment was distributed among between the partners and a financing fund, generating an NPVE of S/. 978870.62, IRRE of 43%, B/C of 4.21 and PRI of 4 years, accepting the profitability of the project.
